How to Prepare the Perfect Oven-Baked Vegan Baked Potato

 

Oven-bake a Medium or Large Russet Potato for Each Person

Russet potatoes are the gold standard for oven-baked potatoes, due to their high starch and low moisture content, tempting texture, and delicious taste.


Yukon Gold potatoes are another choice, but that variety yields a creamier—rather than a fluffy middle and thinner skin. 


Perfect vegan baked potatoes do best baked in a preheated gas or electric oven, at a temperature of 425 degrees Fahrenheit or 218 Celsius. Cook time will vary depending on the size of the potato and at what altitude your home/ oven is located.  Cook for approximately 45 minutes to an hour or hour and a half. 


Hint: The key to making a good baked potato is getting really crispy skin, therefore the high cook temperature. If you wrap the potatoes in foil, the potato skins will shrivel and soften in the oven. Also, aluminum can be absorbed into the potato and that isn’t healthy.  For best results, leave the potatoes unwrapped. If you oil the skin before baking, it makes the skin soften and that’s not what we're aiming for.


Tip: For best results and to ensure your potatoes cook evenly, choose ones similar in size. This will help them bake uniformly and achieve that perfect consistency.

 

 Ingredients:

 

4 Organic Russet Potatoes about ½ pound each


Salt and fresh ground black pepper to taste


Optional toppings (choose one or more): extra virgin olive oil, steamed broccoli, sautéed broccolini, asparagus, sautéed zucchini, spinach, Tex-Mex combo (beans, vegan cheese, vegan sour cream, salsa, and guacamole and seasoning), red pepper, carrots, butternut squash, marinara sauce, roasted mashed  garlic, Vegan Pesto, Vegan Pizza Style toppings, or Asian style topping including grated ginger and garlic, tamari sauce, and chopped bok choy, etc.

One variety I made was sautéed zucchini, tomato sauce, onion, garlic, Italian seasoning, and chopped carrot on pieces of oven baked potatoes

 

What to do:


1.   Buy organic Russet potatoes that feel firm, and seem heavy for their size. Look for those with a smooth surface and even complexion. Potatoes with eyes, dark spots, or a greenish hue should not be used.

 

2.   Preheat oven to 425 degrees F or 218 degrees C.

 

3.   Wash potatoes with cold water, then use a vegetable scrub brush to get off the rest of the dirt and debris

 

4.   Use a clean dish towel to pat dry each potato and place on a piece of unbleached parchment paper covered sheet pan. If you don’t have parchment paper place directly on sheet pan (using parchment paper cuts down on clean up).

 

5.   Prick each potato with a sharp knife 2 or 3 times near the center top part of each potato. This will allow steam to escape while cooking and prevent potato from exploding. It also helps potato cook more evenly.

 

6.   Cook potatoes until crisp on the outside and fluffy on the inside. Test each one at 45 minutes by taking it out of the oven and piercing the center with a fork. If the fork easily goes through, it's done. Just remember, the bake time will be longer for larger potatoes and shorter for small ones. 


7. When potatoes are cooked, make a slit in the top, going across the length from end to end (keep sides attached on the bottom). Then make a smaller slit crosswise in the center top. Scoop out about 1/2 of the flesh. Sprinkle seasoning inside of baked potatoes  (use salt and pepper). Mash the potato you scooped out with a fork, and put it back into the potatoes. Then, it's as simple as adding a drop of olive oil as a topping or using a topping from those outlined above.

I also made vegan baked potato with salt and pepper, sautéed chopped broccolini, onion, garlic, and a drop of olive oil


This recipe serves four people. Place potatoes on a serving dish or on individual plates to eat at lunch or dinner. A perfect baked potato goes great with a bowl of soup, salad, sandwich, or combo of all.  🥔

Awesome Vegan Zucchini Lasagna Recipe

 

Vegan Lasagna: delicious, nutritious, and attractive



In a food rut? My suggestion is to make Awesome Vegan Zucchini Lasagna, as I did this week. This gluten free plant-based dish is sure to perk up your taste buds. It's a simple-to-follow recipe that's tasty as all get out.

Zucchini, is featured in place of lasagna noodles. 


The filling is made with bright red tomato sauce, vibrant herbs and spices, and tofu,which is high in protein, fiber, calcium, and additional nutrients. This protein powerhouse builds muscle, protects your health, and lowers cancer risk.

 

 

 

Although this lasagna is low-carb and gluten-free, it's hearty and filling. Each serving is colorful, tasty, and nourishing.

No need to worry about handling tofu. Here are simple directions to prep tofu.



 

 

The secret to making this bland tasting high protein ingredient flavorful is to season it well. Use plenty of Italian type spices and herbs. Your meal mates and you will shout its praises.  

 

 

 

With no cholesterol and moderate cost to boot (organic tofu is approx. $2.00-$3.00 per package), this entrée is both healthy and economical.

 


 

 

Let it bubble away in the oven, while you read the Sunday paper or watch the game. If you prefer, prep it a day ahead so the flavors meld. Allow a half hour prep time and an hour cook time. Whenever you decide to cook it, take it from me, it's fun to assemble, cook, and serve.

 

 

Awesome Vegan Zucchini Lasagna Recipe

 

 

 

Ingredients:
 

 

1 14 oz.-16 oz. container firm or extra firm organic tofu that has been drained

4 medium organic zucchini

2 15 oz. cans crushed, chopped, or diced organic tomatoes including juice, or a jar of ready-made tomato sauce, or fresh in-season tomatoes instead

1 can (4 oz.) organic mushrooms or 1/2 cup fresh mushrooms chopped

1 medium chopped organic onion

4 fresh garlic cloves peeled and minced

1 cup fresh chopped basil (1/2 cup for sauce and 1/2 cup for tofu)

2 teaspoons dried thyme (half for sauce and half for tofu) or 2 Tablespoons fresh chopped thyme (half and half)

2 Tablespoons of fresh chopped sage (half for sauce and half for tofu) or 2 teaspoons dried sage (half for sauce and half for tofu)

1/4 cup fresh oregano (half for sauce and half for tofu)

 

Optional: Adding extra items to the sauce adds depth, increases thickness, nutrients, and calories. Try adding one or more of the following: 1/2 cup fresh tomatoes, 1-6 oz. can organic tomato paste, 2 organic chopped carrots, 1 organic red pepper chopped, 1 teaspoon hot pepper flakes, bunch organic parsley chopped, a few sprigs of rosemary, beans or legumes, or other seasonings you enjoy.

 

TIP: Although this recipe has many ingredients, you can simplify it by replacing all the herbs and spices with a ready-made Italian seasoning blend

 

What to Do:

 

1.    Gather ingredients including a 13"x9"x2 1/4" baking pan or similar. Preheat oven to 400 degrees Fahrenheit. Drain tofu for at least 10-15 minutes, then mash or chop drained tofu. 

 

2.   Cut off end pieces of 4 medium organic zucchini. Zucchini is often sandy, so scrap and rinse zucchini. Slice each with a mandolin slicer or by hand. Make pieces about 1/8 " thick. Here's a photo to show you how 2 zucchini look, after they have been scrapped clean, and the other two have been sliced thin.

3.  Chop onion and mince garlic. Brown onion and garlic in a small frying pan, and put half into the tofu bowl.

 

4. In a bowl, combine all ingredients that are going into the sauce including chopped onion and garlic and blend them together. I like thick sauce so I always add an optional can of tomato paste.

 

5. Spread a layer of tomato sauce on the bottom of the baking dish and put a layer of zucchini over it. 

 

6. Spread the tofu mixture over that. Top with a third layer (zucchini layer). Top with remaining tomato sauce. Grind on fresh pepper and salt to taste. Add parsley, basil, or other fresh herbs as a garnish. May also add vegan cheese shreds.

 

7. Cover with aluminum foil and bake in a 400 degree F oven for approximately three-quarters of an one hour. Uncover and cook until zucchini is soft and lightly browned. Test to see whether a knife will cut through a piece easily.


See how fun it was to make? Only seven steps and you're done!

 

Awesome Vegan Zucchini Lasagna is the perfect dish to eat on the weekend, either for brunch or dinner. It serves 4-6 generous portions, with leftovers.

Vegan Recipe Collard Greens and Dirty Rice

Want to learn how to make delicious, healthy, hearty 5 Star ★★★★★Vegan Collard Greens, Beans, and Dirty Rice? 

It's a recipe that blends simple ingredients with savory and spicy seasonings for a lively meal too scrumptious to pass up.

I relish reading my fellow bloggers' food posts and frequently search for online inspiration. If  a recipe idea attracts me, I test it and adapt the dish to satisfy my hunger, make good nutritional sense, and feed my soul. 


A few years ago, I saw a Cajun/Southern style Dirty Rice Recipe that featured animal protein. The "dirty rice" part of this dish got its name from chunks of fatty meat and seasoning that makes the rice and collards look dirty, and food too greasy and high in cholesterol. 


So I converted this conventional recipe into a plant-based, gluten free, cholesterol free main dish delight. 


My adaptation is rich in flavor, vegan, and provides a good amount of calcium, protein, and antioxidants. See details about the health benefits of collards here. See the health benefits of beans too.

5 Star ★★★★★Vegan Collard Greens, Beans, and Dirty Rice


This dish is perfect for times you crave spicy, wholesome, and filling. Please let me know how you like it.


Ingredients:

 

3 cups low sodium vegetable broth

1 cup long grain brown rice (I used organic brown Basmati for the aroma, health benefits, and good taste)

1 bay leaf

½ teaspoon ground turmeric

1 15 oz. can garbanzo beans (drained) or same amount of pinto or other beans

1 bunch collard greens (about ten leaves) middle stalk (stem) removed from each piece

1 chopped red or yellow onion, or a bunch of scallions to equal 1 cup

2 garlic cloves, minced

1 teaspoon grated fresh ginger

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon onion powder

1/8 teaspoon cayenne pepper up to 1/4 teaspoon depending on how hot you like it

2 Tablespoons olive oil

1/2 cup raw shelled pumpkin seeds

1 Tablespoon low sodium non-GMO gluten free soy sauce

Freshly ground black pepper

2 Tablespoons nutritional yeast. "Nooch" as it is affectionally called, adds a savory layer of flavor, and pleasing golden yellow color to this dish. Nutritional yeast is available in the bulk section of most markets or comes in a shaker container located near the spices.


Optional ingredients: mushrooms, red pepper, celery, carrot, or other veggie you enjoy. If you're using additional veggies, clean and chop them before proceeding to step one.

 


 What to do:


1. In a sauce pan bring 2 cups vegetable broth to a boil. Add the rice, bay leaf, turmeric, paprika, and freshly ground pepper. Cover and return to a boil. Reduce heat to simmer and cook 30 to 35 minutes, or until the rice is tender and the liquid has been absorbed. Remove bay leaf and let the rice sit for a few minutes. Then, fluff rice with a fork.


2. While the rice is cooking, prepare the collard greens, (one cup contains 10% of the RDA of protein and 27% for calcium). 


Wash the collards in cool water. Place one leaf on your cutting board at a time. Remove the tough stalk that runs down the center of the leaf by slicing down each side of the stalk.

Stack the collard leaves one on top of the other, with the leaf tips all at the same end. Roll the stack tightly in a long tube. Starting at the thick end, slice the collards as thinly as possible to make spaghetti like strands. Then cut the strands across into ½ in. pieces. Chop up stalks to put in a stew or soup. If you can't use them in any other way, put stalks in your compost pile. 






3. Place raw pumpkin seeds in a roasting pan in the oven. Set temperature to 450° F. When the oven reaches that temp, remove the seeds from oven and let sit. For health facts see Pumpkin Seed Health Benefits from Medical News Today.

4. Heat the olive oil in a large skillet over medium heat. Add the onion or scallions. Sauté until tender for approximately 5-7 minutes. Stir in the minced garlic, grated ginger, and other spices and sauté another two minutes. Add any extra vegetables you want to include now. 


Please Note: for an oil free version use veg broth instead of oil.


5. Pour in the last cup of vegetable broth and add beans into the mixture. 


One cup of beans provide 6g-9g of protein, 6 g of fiber, and 10% of the RDA for Iron. Beans add depth and creaminess to this recipe without adding fat.

Stir in the collard strands and cover the skillet. Cook over medium-heat for 5-10 minutes more, or until the collards are tender and beans are hot. If there is a lot of liquid left in the pan, refrigerate it to use in soups, gravies, or stews.

 

6. Combine collards, beans, roasted pumpkin seeds, low sodium gluten free soy sauce, and nutritional yeast. 


Either serve on a bed of dirty rice as shown in the picture at the top of this post or mix all ingredients together as illustrated below.

Grind in a generous amount of black pepper. Taste and adjust seasoning if needed. 


Serve piping hot or at room temperature. This recipe goes well with a salad and cornbread. It will serve 4-6 hungry people. 💚
